いか大根
レシピ:
- いかは内臓を取り除き、胴は1.5cm幅、足は吸盤を取って１本ずつ切り離す。
- 大根は1.5cm厚さのいちょう切りにして下ゆでする。
- 鍋にだし汁、しょうゆ、酒としょうがを入れて煮立て、いかをさっと煮て取り出し、大根を入れる。
- 煮立ったら弱火にし、落とし蓋をして15分煮る。
- いかをもどし入れて蓋を取り、大きく鍋を返しながら煮汁が少なくなるまで煮詰める。
