しめ鯖
レシピ:
- 鯖を三枚におろす
- 塩をふって冷蔵庫で1時間しめる。バットに並べ入れ、鯖の頭側を少し高くして、水分がサバに戻らないようにする。
- サバを水でさっと洗う。
- 皮を上にして酢に20分漬ける。
- アニサキス対策のために-20℃で24時間以上冷凍。日本の家庭用冷蔵庫の冷凍室の温度は、JIS規格により-18℃以下
- 食べるときは、腹骨を包丁ですき取り、中央に連なる小骨を1本ずつ抜き、薄皮をはぎ取り、食べやすい幅に適宜切り分ける。ショウガやわさびを添えて醤油でいただく。
