カルボナーラ
レシピ:
- 塩を少々入れパスタをゆでる。後でゆで汁を使うので、塩の入れすぎに注意。
- パスタを茹でている間に、塩漬けした豚バラ肉、パンチェッタを炒める。1㎝程度の大きさに切って、オリーブ油をしいて、ローズマリーをのせ、黒胡椒をふって、カリカリになるまで弱火でじっくりと炒める。脂身の多いベーコンを使う場合は、油をひかずに焼いて、後でオリーブ油を足す。
- カリカリのパンチェッタに、ゆであがったパスタとゆで汁を少々追加しながら、スパゲッティにうまみをからめる。みじん切りパセリも混ぜて香りをつける。
- 火を止める
- 小皿に卵とチーズ（ペコリーノ・ロマーノ、パルミジャーノ・レッジャーノ、グラナ・パダーノ）をかるくかき混ぜ、パスタに加える。卵が固まってしまわないように常にかき混ぜる。必要に応じてゆで汁も追加。
- 塩、黒胡椒で味をととのえる。パンチェッタやペコリーノロマーノ、ゆで汁で十分塩味がついているので、塩加減に注意。必要に応じてパスタ煮汁を加え、弱火でさらにかき混ぜてクリーミーに仕上げる。
- 生クリームは、卵が固まるのを防ぐためのレストランの方法で、本来は入らない。
- 皿に盛って、黒胡椒、チーズを少々。パセリの葉で飾りつけ。
