シシモツ鍋
レシピ:
- 肝臓は適当な大きさに切り、10～15分程度水に漬け血抜きをする。大腸・小腸は内側の絨毛を流水でよく洗い内容物をとる。胃は薄膜をはがし、流水でよく洗いヌメリをとる。
- モツを適当な大きさに切り、軽く茹でる。
- 新しく湯をはった土鍋に茹でたモツと野菜、ごぼうのささがき、みそを入れ（好みでしょうゆ味も 可）、火が通ったところで一味唐辛子とアサツキをかけて食する。
