シシ鍋
レシピ:
- 土鍋に日本酒酒１：水１をはり、昆布を１～２枚入れる。
- よく水で洗ったシシのガラ（肋骨・背骨・手足の骨）を割り、10～15センチ程 度のものを１～２本入れ、30分から１時間漬けておく。
- 土鍋を火にかけ、弱火にして30分から１時間程度そのままにしておく。
- アクを丁寧にすくう。昆布とガラを取り出し、みそを溶いて味付けをする。
- 肉を冷凍している場合は半解凍して切る。ごぼうはゴボウささがけ、肉と野菜を適宜入れ、火が通ったところで紅葉オロシとアサツキを入れたポン 酢をつけて食す。
