茶碗蒸し

- 蒸し器の湯を沸かす
- 鶏肉下ごしらえ 1㎝角ほどに切ったあとに、さっと熱湯をかけて霜降り。
- 塩ひとつまみをもみ込んで下味をつける。
- ボウルには卵を割り入れ、卵白のかたまりがないようにしっかりと溶く。だし汁を入れて塩を加え、溶かし混ぜ、具の上から注ぎ入れる。具材は卵液の1/5程度。だし汁の量は、卵の約3倍。卵液をザルやこしきでこすと蒸し上がりがなめらかになる。
- 蒸気の立った蒸し器に入れ、菜箸を１本かませてフタをする。強火で3分→弱火で約10分加熱し、一度火を止めて火の入り加減を確かめる。傾けたときに、汁が透き通っていたらOK。火が通っていなかったら菜箸を外して蒸し器のフタをきっちりと閉めてから、弱火で2～3分蒸し、火を消してそのまま3分待ち、余熱で蒸らす。
- 蒸し器がない場合、フライパンの底に布巾を敷き、フライパンの1/3くらいの高さまで水を入れて強火にかけ、沸騰したら具材と卵液を入れてアルミホイルでフタをした耐熱の器を入れ、菜箸をかませてフタをする。
