鮭とブロッコリーの辛みそ炒め
レシピ:
- 生鮭は腹骨をすきとり、身の中央の小骨も抜きとり、3cm角に切る。塩をふってしばらくおき、水気をふいてこしょうをふり、小麦粉をまぶす。
- ブロッコリーは小房に分け、茎は皮をむいて食べやすい大きさに切る。塩少々を加えた熱湯で1～2分色鮮やかになる程度にゆでる。
- フライパンにごま油大さじ1を熱し、鮭を皮目から入れて弱めの中火でじっくりと焼き、返して全体に焼いて火を通す。
- 味噌、酒、しょうゆ、唐辛子で合わせ調味料を作る。
- ブロッコリーとネギ少々を入れ、合わせ調味料をまわし入れ、手早く全体に炒めて味をからめる。
