鮭の三平汁
レシピ:
- 鮭のアラはぶつ切りにし、塩気が多い場合は水につけて塩抜きする。
- 大根とにんじんは乱切り。じゃがいもはひと口大に切って水にさらし、水気をきる。ごぼうは乱切りにし、水にさらして水気をきる。長ねぎは斜め薄切りにする。
- 鍋に昆布と水1リットルを入れて10分ほどおき、大根、にんじん、じゃがいも、ごぼうを入れて中火にかける。
- 沸騰直前に昆布を取り出し、鮭を加えて煮る。
- 火が通ったら酒大さじ2を入れ、味を見ながら塩を加える。
- 長ネギを散らして火を止める。
