鯛のあら汁
レシピ:
- 鯛のあらに塩を振り、30分置く
- 生姜薄切り、長ねぎの白い部分を小口切り、大根はいちょう切り、豆腐は食べやすい大きさに切る。
- ボウルに鯛のあらを入れ、熱湯をたっぷり加えて軽く混ぜ、表面が白くなったら差し水で冷ます。うろこが取れやすくなるので、流水にさらしながら血合いやうろこを手で取り除く。このまま冷凍しておいてもよい。
- 鍋に水500ml、鯛のあら、大根、生姜、酒大さじ2を入れ中火で熱する。
- 沸騰したら弱火にし、アクを取る。
- 大根と鯛のあらに火が通ったら豆腐を入れ、温まったらみそ󠄀大さじ1を溶かし入れて沸騰直前で火を止める。
- 器に盛りつけて、ねぎを散らす。
