かれいの煮つけ
レシピ:
- かれいを下処理する。包丁で顔の部分、ヒレは広げて、ウロコやぬめりをしっかり取る。黒い皮側に十字に切り込み。内臓は出す。うすい塩水、または流水でエラの内側までていねいに洗い、水けをよくふき取る。
- 鍋に水カップ１、しょうゆ 大さじ２、酒 大さじ２、みりん 大さじ１、薄切りのしょうがを加えて、中火にかけ、煮立ったらかれいを入れる。
- 落としぶたをして、８分間煮る。
- 落としぶたを取り、ししとうがらしを隙間に入れて、煮汁が少なくなってトロリとするまで数分間煮詰める。
- 器に盛りつけ、針生姜を添える。
