ぶりのあら汁
レシピ:
- ぶりのあらは水でよく洗い、ざるに乗せて熱湯を回しかける。
- だいこんは約5mm厚さのいちょう切り、長ねぎの白い部分は約1cm厚さの斜め切り、青い部分は小口切り。
- 鍋にだし汁・だいこんを入れて中火にかけ、あくを取りながらだいこんがやわらかくなるまで5～6分間煮る。
- ぶり、酒を加え、ぶりのあらに火が通るまで7～8分間煮
- 長ねぎの白い部分を加え、みそを溶き入れてひと煮立ちさせ、火を止める。
- 器に盛り、長ねぎの青い部分をのせる
