イカの塩辛
レシピ:
- 胴を開いて残った内臓や汚れをふき取る。わたは墨袋を取り除く。
- ワタの両面にうっすら白くなるくらいたっぷり塩をふりかける。
- ワタをざるにのせて、受皿をした状態でラップ。冷蔵庫で半日から1日置く。
- 胴をざるなどに並べて両面にうっすら塩をする。ラップをせずに、冷蔵庫で半日から1日おいておき、適度に水分を抜く。2〜3時間の風干でもよい。適度に乾燥させて身をねっとりさせると美味しい塩辛になる。
- 胴は縦3等分に切って、それを端から5〜7㎜ほどに切りそろえる。
- ワタはさっと洗って塩を落とし、長さを半分に切る。それからバットや皿の上に移し、しゃもじなどを使ってワタだけをしっかりしごき取る。
- 切ったイカの身とワタを合わせ、しっかりと混ぜ合わせ、清潔な容器に移してアニサキス対策のために1日以上冷凍保存
- 自然解凍後に清潔な箸で取り分け、冷蔵庫で1週間ほど日持ちする。
