レシピ:
- 牛乳を鍋に入れ、沸騰直前の９０℃まで中火で温め、火を止める。温度計が無い場合は、９０℃で小さな泡が立ち始めた頃を目安に。
- 温まった牛乳に、酢を少しずつゆっくりかき混ぜながら入れる。すぐに分離してくるので、かき混ぜるのを止めて、５～１０分くらい静かにおいておく。
- しっかり分離させてから、キッチンペーパーや漉し布などを使って漉す。
- 水分が自然と落ちたら、中央に集めるような感じで、少し押しながら水分を絞り落とす。キッチンパーパーに穴が開かないように注意。
- 500ccの牛乳から、カッテージチーズが50gくらい出来る。
