ゴーヤチャンプルー
レシピ:
- 木綿豆腐をキッチンペーパーなどにくるんで、1時間ほど重しをして水切り。
- 豚バラ肉を3〜4cm幅に切り、黒胡椒をふっておく。
- ゴーヤは縦半分に切り、スプーンなどでわたをきれいに取り除き、５㎜にスライス。ゴーヤ1本に対して、塩小さじ1と砂糖小さじ2をまぶして軽く混ぜ合わせ、5分おく。ボウルに入れて塩でもみ、水で洗い、水気をきる。
- フライパンにサラダ油小さじ1をひいて温め、豆腐を手でひと口大にちぎって入れ、両面焼き色がつくまでじっくり中火で炒め取り出す。
- フライパンはそのまま、ごま油小さじ1を追加して、透明感が出るくらいゴーヤを炒め、取り出す。
- 豚肉をフライパンに広げ入れ、両面を焼き、豆腐とゴーヤを戻し入れる。
- 溶き卵1個分を全体に流し入れ、10秒ほど待ってからフライパンを振る。
- 塩、こしょう、しょうゆ少々で味付け、ひと混ぜ
- 器に盛りつけ、かつお節をちらす。
