ぶり大根
レシピ:
- 大根は皮を厚くむいて、２cmの輪切りもしくは半月切り、竹串がすっと通る程度まで30分ほどゆでる。
- ぶりのあらに塩をふって20分おき、大根のゆで汁または熱湯をまわしかけ、ひと混ぜしたらすぐに水を流し入れて冷まし、ぬめりや血合いを洗って水気を切る。
- 鍋を用意し、下に大根、上にぶりのあらをのせ、水:酒=3:1でひたひたの水加減にする。臭み消しにショウガを入れる。
- 強火にかけアクをしっかり取り除いてから、しょうゆを加え中火のぐつぐつ煮立つ火加減で30分
- 落し蓋外してさらに5分。
- 柚子皮の千切りを添えて盛り付け。
