なすの鍋しぎ
レシピ:
- なすはヘタを切り落とし、ピーラーで皮をところどころむき、乱切りにして、水に１０分さらしてアクを取る。
- しし唐辛子はふくらんでいるところに、包丁で浅い切り込みを入れておく。
- 鍋にサラダ油とごま油を入れて中火で熱し、水気をよく拭きとったなすを加えて炒める。
- 少ししんなりするまで炒めたら、しし唐辛子を加え、酒、砂糖、しょうゆを順次入れて炒め合わせる。
- 最後にみそを加えて混ぜ合わせる。
- 水大さじ1/2を加えてなじませ、器に盛りつける。
