タケノコのゆで方
レシピ:
- 外皮２〜３枚だけ剥がし、穂先を斜めに切り落とす。
- 断面に、可食部まで届かないように垂直に切り込みを入れる。
- 鍋に、タケノコ、米ぬか、鷹の爪を入れ、タケノコがかぶるように水を入れて、火にかける。米ぬかは茹でる水の１割くらい。なければ生米や米の研ぎ汁で代用
- 沸騰したら弱めの中火にして、落し蓋をする。
- 水面がグツグツ揺れるくらいの火加減で、じっくり１〜２時間茹でる。水を足しながら、タケノコが湯から出ないようにする。
- 竹串を刺してみて、柔らかくなっていたら火を止め、茹で汁につけたまま冷ます。
- 切り込みのところから皮を剥く。穂先の固い部分は、切り落とす。
- 保存する際は、茹で汁ごと。
