あさりの酒蒸し
レシピ:
- あさりは海水程度の3.5％塩水で砂抜きをする。水はひたひた、冷暗所で2～3時間。調理前に貝同士をこすり合わせるようにして洗う。
- 長ねぎは斜め薄切り、三つ葉は3㎝幅に切る。
- 鍋に長ねぎを広げ入れ、あさりと酒を加え、中火にかけ、蓋をして２分程蒸し焼き
- あさりの口が開いたら三つ葉を加え、軽く混ぜ合わせて火を通す。汁ごと盛り付ける。
- 好みできのこ類、えのき茸＋三つ葉、キャベツ＋うど、クレソンや水菜、せん切りにしたにんじんなどの野菜もいっしょに酒蒸し。ニンニクやショウガなどの薬味をみじん切りにして合わせてもよい。
