ずんだ餅
レシピ:
- 鍋に湯を沸かし、さっと洗った枝豆をさやごと入れ、沸いたら火を少し弱め15分ほどかけて柔らかめにゆでる。
- ざる上げして、手でさわれる温度になれば、さやから実を取り出し、薄皮を取り除く
- 取り出した実は完全に冷める前に、砂糖と塩を混ぜ合わせる。すり鉢に実を移し、砂糖と塩を合わせ、すりこ木で粗くつぶしながら混ぜていく。すり鉢がなければ、フードプロセッサーで軽く撹拌してつぶす
- 餅は、弱火でコトコトと3～5分ほどゆでて火を通す。バットに水をはり、その中にやわらかくなった餅を移し、水がぬるくなるので一度水を取り替え、そのまま冷蔵庫に移す。餅は冷えると硬くなって食べにくくなるので、冷蔵庫で冷ます時間は10〜15分くらいまで。
- たっぷりのずんだあんを餅にからめ、器に盛り付け
