ほうれん草のおひたし
レシピ:
- 鍋に加える塩は水1Lにティースプーン山盛り1杯。ほうれん草は洗ってから、塩をきかせたたっぷりのお湯で茎側を30秒、全体を浸けて30秒と計1分ほどゆでます。
- 冷水にとって急激に温度を下げると、鮮やかな色が保てる。
- ほうれん草は軽くしぼってから4～5㎝幅に切ります。『ほうれん草を切った後にひとかたまりづつもう一度しっかりしぼる』
- 鰹と昆布のだし汁:しょうゆ:みりん＝8:1:1につけて、1時間以上。
- かつお節をふって盛り付ける。
