レバニラ炒め
レシピ:
- にらは４cm長さに切り、もやしとともに水にさらしてシャキッとさせ、水けをきる。
- レバーは筋などが残っていたらそぎ取り、７～８mm厚さのそぎ切りにし、氷水に約10分つけて臭みを抜く。水けをきってボウルに入れ、下味をもみ込んで約10分おき、片栗粉小さじ１を加えて混ぜる。
- フライパンに油大さじ１を熱し、レバーを下味を軽くきって１切れずつ広げ入れ、両面にこんがりと焼き色がつくまで焼く。
- フライパンのあいたところに豆板醤と、ねぎ、しょうが、にんにくを入れて軽く炒め、レバーと炒め合わせる。香りが立ったら、にらともやしを加えて手早く炒め合わせる。
- 油がまわったら、オイスターソース、酒、しょうゆの合わせ調味料を回し入れて、さっと炒め合わせて味をからめる。
